Under the watchful eye of master chef Ludovic Dupont, all the flowers, fruit and leaves are used to signal that Spring has come at last. You almost hesitate before plunging your fork into the colourful display.

Culinary art and nature merge; all our senses are awakened. Your taste buds will delight to the subtle flavour of a nasturtium cream soup, a lemon pie, a violet crisp, nettle soup, a cold/hot floral pancake with pansies and a delicious cup of sallow thorn tea.
Ludovic’s latest discovery is the chayotte. This fruit, originating from Reunion Island and Martinique (Leeward Islands), also grows in Valloires, taking advantage of the temperate climate of the Baie de Somme.
“I like to amaze people,” says Ludovic Dupont, and the most amazing thing is that there is a truly balanced diet behind this culinary wealth. This type of ‘nature’ meal is recognised by numerous websites and magazines specialising in natural or organic cooking and sometimes even vegetarian cooking.
Indeed, the saying "eat 5 different fruit and vegetables each day” is respected to the letter in this case. Nature lovers, tuck in!
